Enemies are all one-hit to your weapon, but you are one-hit to all enemies. This means you must kill the enemies before they kill you. A way to stay safe is by crouching('C') to duck the enemy projectiles or even better you can slide to kill enemies while ducking all projectiles. Using your movement skills gives you an advantage since the enemies can only walk/attack so use them and have fun!
